Wet-Brined Smoked Maple Cottage Bacon

This is a new 'Whole Hog' bacon collection!  It is processed differently than our other two dry-cured options (Salumi and Charcuterie).  Those options take much longer to finish and are packaged for slicing at home.  This option is a much faster option intended for cooking that is more affordable to produce.

 

This is an entire Mangalitsa hog cured in a wet brine with organic herbs, spices, and maple syrup, then smoked over our applewood.  From there, it is sliced to 3/16" and packaged in 1lb vacuum sealed bags. This is a very versatile collection that is perfect for quick oven baking and pan frying for hot sandwiches, thin breakfast steaks with eggs, toppings for pizza, or chopped and added to soups, pastas, stir-frys, you name it.  The flavor is savory and so, so good. 

 

Choose from Slab bacon, Buckboard Bacon, Rasher (Loin and Back) Bacon, Sirloin Bacon, Gammon, and Speck. Comes in 1lb packages.

 

Our Mangalitsa hogs are untainted, unmedicated, and unvaccinated. They are robust and vibrantly healthy foraging on our land, and eating non-gmo, corn-free, soy-free, custom milled grains that are fermented in our raw jersey milk.
