Cheese Wheel Deals!!

Introducing our new Helios Farms Cheese Wheel Deals. Secure your wheels in advance at a discount! Purchase a 10lb whole or 5lb half wheel in advance for delivery in 6 months at these prices. This will allow us to get several wheels going every week. Each batch takes about 20 gallons of milk, 12 hours of intense cheesemaking, and then daily management (misting, turning, brushing, and rewrapping) of your special wheels for 6 months. These cheeses require a lot more care during the affinage period because we do not use petroleum-based waxes. We will let know when we start your cheese and put your name on your wheel.  We will send you a note when we take a core sample a week ahead of it's due date, trim the rind, seal. and then arrange for delivery or shipping with you. It feels a lot like waiting for calves to be born :) We are excited to share this cheese adventure with you!

 

Pinot Misted Ghee-Wrapped Cheddar is a semi-hard cheese with a robust flavor and flakier but smooth texture that melts well. It is Ghee-Wrapped, which means we hand-wrap our Cheddar in cheesecloth with a thick coat of ghee instead of wax for aging the cheese. We also regularly mist our Cheddar with Pinot Grigio to deepen the flavor and keep the humidity conditions just right as it ages.  

 

Pinot Misted Gouda Cheese is a semi-soft to firm cheese with a deep nutty flavor, and a smooth, creamy texture that melts very well. We also regularly mist our Gouda Cheese with Pinot Grigio to deepen the flavor and keep the humidity conditions just right as it ages. 

 

Ghee-Dipped Jack is a softer, milder cheese with a smooth texture that melts well. It is Ghee-Dipped, which means we coat each wheel coat of ghee instead of wax for aging the cheese. Our Jack cheese takes less time to finish and so your wheel or half wheel will be ready a couple months after we make it.  

 

Hello, Untainted Cheese!  Our cheese is uniquely untainted using untainted milk from our untainted, non-medicated, unvaccinated, grass-fed Jersey cows, and our home-grown farm cultures and natural animal rennet. Whew! With ingredients like that, the resulting cheese is literally incomparable, since ALL commercially available cheese starts with vaccinated milk and Pfizer/Merck-supplied cultures and rennet. That was disturbing to discover, but we had already been using our own native farm cultures for years.

We just debuted our new cheeses, and you loved them so much they are almost gone!  It took a lot of false starts, hundreds of gallons of fresh, sweet milk, effort, constant care and about 4-5 months before we could even test the cheeses to see how we did as new cheesemakers. Well...we are more than a little encouraged! We are almost at the 6 month mark now, and they are even more deep and complex in their flavor and texture development. So we are ready to make more.  A lot more!

The smaller quantities are mostly out of stock until our production and affinage catches up with our demand (around July 2025 maybe).  Those are the 4oz, 8oz, and 16oz sizes.

 

But this deal is for the BIG WHEELS, purchased in advance and delivered when they are ripe and ready in 2-6 months.

 

We are just adding Ghee Dipped Jack cheese and are looking into other cheese like Havarti and Parmesan, along with some soft cheeses, but for now, we are going to go forward with the Pinot-Misted Ghee-Wrapped Cheddar and Pinot-Misted Gouda
