Pork Tenderloin With Lace Fat
~1lb Our pork tenderloin wrapped in lace fat is one of the most precious cuts from our hogs. It is the first cut that we pull from our hogs during butchering. It is then wrapped in lace fat we carefully collected during harvest. Low-flamed on the barbeque, seared in lard, ghee, or tallow on the stovetop, or roasted, this is the most tender, downright succulent cut of pork you will ever eat. Try your favorite dry spice rub, and do not overcook! Salt to taste AFTER it's cooked. Let rest 15 - 20 minutes before serving to set the juices.
Our hogs are from Berkshire sows that are bred to our 1/2 Mangalitsa and 1/2 Red Wattle boar. Our hogs are untainted, unmedicated, and unvaccinated. They are robust and vibrantly healthy foraging on our land, and eating non-gmo, corn-free, soy-free, custom milled grains that are fermented in our raw jersey milk.
