Sour Cream - Thick and Creamy
Helios Farms Sour Cream is now made by taking milk fresh from the cows and culturing it at room temperature for a day or two until the cream on top is thick and tasty. The cultures came from our cows. This is the traditional method (Smetana) and it leads to a consistently clean tasting sweet tangy cream. We then chill it and drip it through a cheesecloth to remove whey and thicken the cream. It is very thick and creamy. The perfect addition to your baked potato. We use it on just about everything. Put a little honey on a dollop of this cream, and it's a perfect desert. Use it like yogurt on fruit or cereal. You can even make your own cultured butter and buttermilk from this sour cream (we do).

Expect some variation in flavor and thickness by the batch. We like the cultured cream to turn out mild and thick. Sometimes it is a little tangier. It can be used like plain yogurt with fruit and nuts for breakfast or dessert. It can also be used in soups and gravies.
A great gravy is meat drippings, a little red or white wine, cultured cream, and nutritional yeast. Season to taste.
