Pork American Ham
Around 5-6 lbs. A Holiday Must! This American Ham is the perfect cut for gatherings and large crowds. With a little less marbling but skin still intact, this ham relies on its bone and outside fat content for its indulgent, classic flavor.
Our pork is brined in Himalaya salt and a heritage, german organic spice blend (no nitrates or nitrites) with fresh spring water from the valley we reside in. Shortly after, it is cold smoked for eight hours with our unsprayed apple wood.
Our hogs are from Berkshire sows that are bred to our 1/2 Mangalitsa and 1/2 Red Wattle boar. Our hogs are untainted, unmedicated, and unvaccinated. They are robust and vibrantly healthy foraging on our land, and eating non-gmo, corn-free, soy-free, custom milled grains that are fermented in our raw jersey milk.
